    Salmon Macadamia Nut Pie

    List of Ingredients




    1 1/2 cups flour
    1/2 teaspoon salt
    1/2 cup shortening
    1 cup cheddar cheese, grated
    1/2 cup macadamia nuts, finely chopped
    3 eggs
    1 cup Swiss cheese, grated
    3/4 cup fat, free sour cream
    1/2 cup onion, finely chopped
    1/4 cup low-fat mayonnaise
    1/4 teaspoon salt
    2 cups salmon, canned, drained and flaked

    Preheat oven to 350º.

    For the crust: Combine flour and salt; cut in the shortening until the mixture is crumbly. Stir in the cheddar cheese and nuts. Set aside 1/4 of the mixture for the topping. Press the remaining mixture into a well greased 9-inch pie pan. Refrigerate until chilled.

    For the filling: beat the eggs. Blend in the Swiss cheese, sour cream, onion, mayonnaise and salt. Fold in the salmon. Pour the salmon mixture into the chilled pie crust. Sprinkle the reserved crust mixture on top.

    Bake for 35-40 minutes or until a knife inserted in the center comes out clean.
