    2 cups cornmeal
    Turkey Giblets
    2 eggs
    1/2 pound mushrooms, sliced
    1 pint of oysters
    1/2 cups Soy sauce
    1 teaspoon black pepper
    1 large onion, diced
    1/4 cup canola or corn oil


    Recipe



    Dice the turkey giblets and boil over low heat. Use a minimum amount of water and save the juice. Add the oysters, mushrooms and eggs to the pot. Stir as you boil for one minute. Take off heat, add the cornmeal and mix. Stir in the black pepper, oil, onions and Soy sauce. Put the mixture in a baking pan and bake at 425 degrees until brown on top, about fifteen minutes. You can cut in squares and use as you would cornbread, or cut and mix as you would stuffing/dressing.

    This recipe will serve four unless there is an extra big eater in the group. The trouble is, this stuffing will make big eaters out of anyone, and the ingredients are not cheap. Add in sage if you must, but the soy sauce takes the place of salt. The canola or corn oil can be omitted if you are fat conscious.
