    Pumpkin Pie Squares

    List of Ingredients




    1 cup flour
    1/2 cup quick cooking oats
    1 cup brown sugar (divided)
    1/2 cup butter
    1 16 oz. can pumpkin or homemade pumpkin puree
    1 (13.5 oz.) can evaporated milk
    2 eggs
    3/4 cup sugar
    1 tsp. cinnamon
    1/2 tsp. ginger
    1/4 tsp. cloves
    1/2 tsp. salt
    1/2 cup pecans
    2 tbsp. butter

    Optional: Whipped topping

    Combine flour, oats, 1/2 cup brown sugar and 1/2 cup butter in a bowl. Using low speed on mix, mix until crumbly. Press dough into the bottom and 1/2 inch up the sides of a 9 x 13 baking pan. Bake at 350° F. for 15 minutes.

    Combine pumpkin, milk, eggs, sugar, spices and salt in a mixing bowl. Beat well with your mixer. Pour into baked crust. Bake at 350° F. for 20 minutes.

    Combine remaining brown sugar, 2 tbsp. butter and pecans in a small bowl. Sprinkle over pumpkin filling. Return to oven and bake for 15 minutes or until filling is set. Cool in the pan on a rack. Cut into squares and serve with a dollop of whipped topping.
