    Homemade Frozen Hashbrowns

    Preheat oven to 350º.

    Grate potatoes into a bowl of ice water to keep them from discoloring while you're working. When you have enough, drain in a colandar and place potatoes on a lightly oiled cookie sheet about 15 minutes, or until about half done; don't overcook them.

    Allow hash browns to cool. Then place pan in freezer and semi freeze the potatoes; remove and package for the freezer, being sure to get out all the air.

    To prepare: Place a small amount of oil in a frying pan. Allow to heat through. Carefully put frozen hash browns in and season to taste. Fry on one side until niced browned and crisy. Flip over and fry other side until crisp and brown.

    Note: Try adding some green peppers and onions. You can freeze the hash browns with some chopped green peppers and onions as well. Just don't cook those with the precooked hash browns. Add them to the cooled hash browns before placing them in the freezer.
