    Spicey Pork & Rice

    List of Ingredients




    1 pound boneless pork top loin
    2 tablespoons margarine
    1 medium onion -- chopped
    16 1/2 ounces canned pineapple chunks -- cut in half
    1 1/2 cups barbecue sauce
    1 green pepper -- cut in strips
    3 cups cooked rice

    Recipe



    Drain pineapple; reserving 1/2 cup of the juice.

    In a large skillet, brown the pork in the margarine. Add the onions and cook until tender. Add pineapple chunks, reserved pineapple juice, barbecue sauce and green pepper. Simmer 20 minutes or until the pork is done.

    Serve over hot cooked rice.
