Creamy Carrot Mold
1 6oz. pkg. Orange flavored gelatin
1 3-1/2oz. can Crushed Pineapple(do not drain)
2 cups Hot water
1 cup Sour Cream
1/2 cup walnuts, chopped
2 cups Carrots, grated
Lightly oil a 2qt. mold, set aside.
Mix together the gelatin and hot water until the gelatin is completely dissolved.
Gradually add gelatin mixture to sour cream, stirring with a wisk until well blended.
Chill just until mixture begins to gel. Stir in pineapple, grated carrots and nuts.
Turn into mold and chill until firm (about 4 hours).
