    Baked Brie in Sour Dough Bread

    List of Ingredients

    1 round (1 lb.) loaf of Sour Dough or French bread
    1/3 cup olive oil or 1/3 cup butter, melted
    2 cloves garlic, finely minced or crushed
    1 whole Brie cheese, about 8" diameter

    Recipe

    Using the cheese as a guide, place the round of Brie on top of the French bread. With a serrated knife or steak knife, cut around the cheese, straight down, to within 1/2" of the bottom. Do not cut through the bottom crust. With your fingers, loosen the center of the loaf and remove it is a single piece and place the Brie into the form fitting cavity. Next, cut off the top crust to form a cap and place on top. Slice the remaining soft inner bread loaf, top to bottom, in 1/2" slices and set aside.

    In a bowl, mix the olive oil or melted butter and garlic. Remove Brie from the French bread mold and brush the inside of the bread and top cap with about half of the oil and garlic mixture. Brush bread slices (croutons to be) with the remaining garlic oil mixture.

    Put the Brie cheese back into the hollowed loaf, replace the cap, and place the loaf and slices on a baking pan. Bake in a 350 F degree oven for 20 minutes removing the crouton slices when browned (about 10 min.). Place croutons on a rack to cool while the Brie loaf is finishing baking.

    When the Brie loaf has fininshed baking, put it on a board and serve with the croutons (toasted slices) as a "real classy" dip.
