    Black Walnut Raspberry Bread

    List of Ingredients

    1 1/2 C. all-purpose flour
    1/2 tsp. baking soda
    1/2 tsp. salt
    1/2 tsp. nutmeg
    1/2 tsp. cinnamon
    1 C. granulated sugar
    1/3 C. confectioners' sugar
    1 1/2 C. fresh or 10 oz. frozen
    raspberries, thawed
    2 eggs, beaten
    2/3 C. vegetable oil
    1 C. chopped black walnuts

    Recipe

    Preheat oven to 350ºF. Grease and flour a 9 x 5 x 3-inch loaf pan.

    Stir the dry ingredients together in a large bowl.
    Mix the raspberries with the eggs and oil. Stir into the dry mixture until the flour is just dampened. (Do not overmix as the bread will be tough.) Add the walnuts. Pour mixture into prepared pan. Bake for 1 hour.

    Serve the bread hot with butter or sift confectioners' sugar over the top and serve cold.
