    Carrot Bread/Crystallized Ginger

    Recipe Introduction

    This recipe is NOT suitable for use with the Delay Timer.

    List of Ingredients

    Ingredients, 1 1/2-lb. loaf:
    3 Tbs. fat-free milk
    1 (6-oz.) jar junior baby food strained carrots OR 3/4 c. pureed cooked carrots*
    2 large eggs*
    2 Tbs. unsalted butter, cut into pieces
    3 c. bread flour
    1/4 c. chopped crystallized ginger
    1 Tbs. gluten
    1 1/2 tsp. salt
    1 3/4 tsp. SAF yeast OR 2 1/4 tsp. bread machine yeast

    Ingredients, 2-lb. loaf:
    1/4 c. fat-free milk
    1 (6-oz.) jar junior baby food strained carrots OR 3/4 c. pureed cooked carrots*
    2 large eggs*
    3 Tbs. unsalted butter, cut into pieces
    4 c. bread flour
    1/3 c. chopped crystallized ginger
    1 Tbs. plus 1 tsp. gluten
    2 tsp. salt
    2 tsp. SAF yeast OR 2 1/2 tsp. bread machine yeast

    Recipe

    Place ingredients in ABM pan per manufacturer's instructions.

    Settings: Dark Crust, Basic Cycle

    When the baking cycle ends, immediately remove the bread from the pan and place it on a rack. Let cool to room temperature before slicing.

    *Same amount for both 1 1/2-lb. and 2-lb. loaves.
