    Corn Meal Fluff

    The origin of this recipe is a 1937 GE recipe brochure, The New Art of Modern Cooking

    List of Ingredients

    1 1/2 cups corn meal
    1 1/2 cups flour
    4 teaspoons baking powder
    1 teaspoon salt
    4 tablespoons sugar
    6 tablespoons shortening
    3 eggs, separated
    1 3/4 cups milk

    Recipe

    Sift dry ingredients. In a medium bowl, beat egg yolks; add milk and melted shortening. Combine sifted dry ingredients with the egg yolk mixture. Beat egg whites; fold into the mixture. Pour into a buttered 6 x 9 x 2 1/2-inch pan and bake in a 400° oven for 45 to 60 minutes.
