    You can make these on top of the stove but I did them in the oven in my cast iron fry pan.

    List of Ingredients




    6 or 7 small potatoes, peeled & diced (about 4 cups or more)
    2 to 3 tbsps bacon grease (can use butter or oil)
    salt, pepper & paprika
    1 large Granny Smith apple, peeled, cored & diced
    2 tbsps pure maple syrup

    Recipe



    Melt the bacon grease then add the potatoes tossing well to coat. Sprinkle with salt, pepper & paprika. Toss again. Bake at 450° on bottom shelf of oven, tossing the potatoes every so often so one side doesn't brown more then the other: for about 15 minutes or till slightly tender.

    In a bowl, mix the apple with the syrup. Add to the potatoes mixing well to coat the potatoes with the syrup & bake another 10 minutes or so. Serve immediately or refridgerate overnight. Just re-heat them in the morning.

    Note: Next time I may just add a sprinkle of cinnamon to them.

    * French bread grilled toast: I have a cast iron grill that I keep on top of my stove & this is how I make the toast at times. I bought it at Williams & Sonoma's but Crate & Barrel carry them too. I love the thing!!
