    Southwestern Sausage Casserole

    List of Ingredients

    Great when served with Spicy Grits or Fried Green Tomatoes.

    3 4oz. Cans Chopped Chiles
    12 Corn Tortillias (cut into 1 inch strips)
    1 1/2# Hot Italian Sausage (Fried Brown and Drained)
    1/2 Cup Each Chopped - Green Onions and Green Pepper
    1/2 Cup Milk
    2 Cups Shredded Monterey Jack Cheese
    8 Eggs
    1/2 teaspoon Each - Garlic Powder, Cumin, Salt and Pepper


    Recipe

    Fry sausage and drain add green onions and green pepper - continue to fry until sausage is brown and vegetables are tender (about 5 minutes). Combine eggs, milk, and spices - mix well with whisk. Grease 9x13 Casserole Dish - line bottom with half of tortillia strips, sausage, chilies, and Jack cheese. Repeat second layer ending with cheese. Pour egg mixture over top of casserole. Sprinkle with paprika and if desired add 8 to 10 thin Roma Tomatoe slices to top.

    Bake in pre-heated oven at 350 degrees for 45 to 50 minutes. Serves 10.

    (Can be made the night before and place it into the refrigerator.)
