    Old-Fashioned Stack Cake

    List of Ingredients

    Dough:

    2 2/3 cups all-purpose flour
    1 teaspoon baking soda
    1 teaspoon baking powder
    1 teaspoon salt
    1/2 cup butter or margarine
    1/3 cup molasses
    1 cup (light) brown sugar
    2 eggs

    Filling:

    1 pound dried apples
    Water
    1 cup (light) brown sugar
    1 cup granulated sugar
    1/2 teaspoon ground ginger
    1 teaspoon ground cinnamon
    1/2 teaspoon ground cloves

    Recipe

    1. For Dough, sift flour, baking soda, baking powder and salt in a bowl; set aside. In mixer bowl, cream butter with molasses, brown sugar and eggs. Add dry ingredients to butter mixture until thoroughly combined. Wrap dough in plastic wrap and refrigerate 30 minutes to 1 hour.

    2. For Filling, place apples in a saucepan and add water to cover. Bring to a boil, reduce heat and simmer until very tender, adding more water if necessary to keep covered. Drain. Place in bowl, add both sugars, ginger, cinnamon and cloves and mash until all ingredients are thoroughly combined. Cool.

    3. Preheat oven to 325 degrees. Divide dough into 6 parts. Roll each part into an 8-inch circle. Grease up to six 8-inch cake pans. Place a round of dough in each pan and bake until golden brown, 15 to 20 minutes (or increase oven to 400 degrees and bake 8 to 10 minutes). Cooks who have less than six cake pans will need to repeat with remaining dough until all six layers have been baked.

    4. To assemble cake, place one layer on a work surface and spread with one-fifth of the filling. Stack with second layer and spread with more filling. Repeat until all layers and filling have been used, but do not put filling on top of sixth layer. Cut into wedges and serve.
