    Pumpkin Nog Pie

    List of Ingredients

    For pastry shell and filling:
    1 9-inch unbaked pastry shell
    1/2 teaspoon pumpkin pie spice
    2 eggs
    1 can (16 ounces) pumpkin pie mix
    1 cup prepared eggnog

    For eggnog topping:
    1 envelope whipped topping mix
    1/2 cup milk
    1/4 cup prepared eggnog
    1 teaspoon vanilla

    Recipe

    Shell and filling: Prepare a 9-inch unbaked pastry shell. If you prepare the pastry shell from scratch, add 1/2 teaspoon of pumpkin pie spice to flour mixture.

    In a mixing bowl, combine eggs, pumpkin pie mix and eggnog. Beat until thoroughly blended. Pour into unbaked pastry shell. Bake at 400 degrees for 45 to 50 minutes until knife comes out clean when inserted near center. Cool.

    To make eggnog topping:In small mixer bowl, combine all ingredients. Beat at medium speed until peaks form.

    Just before serving, spoon eggnog topping around edge of pie.
