    Hot Pepper and Orange Preserve

    Recipe Introduction

    Vibrant citrus combines with hot peppers for a sweet and spicy sensation. It's a perfect topping for a warm biscuit or corn muffin.

    List of Ingredients

    1/2 navel orange
    1 1/2 hot fresh red chile peppers
    1 cup granulated sugar
    1/4 cup water
    2 tablespoons fresh lemon juice

    Recipe

    Quarter the orange and remove the seeds; do not remove the peel. Carefully remove the stem and seeds from the chiles and cut in quarters. In a food processor, combine the orange and pepper pieces and process until smooth.

    Transfer the puree to a deep 2-quart microwave-safe casserole, and stir in sugar, water and lemon juice. Cook at full power for 2 minutes. Stir, and cook until thick, about another 4 minutes. Allow the jam to cool to room temperature, cover and refrigerate. Store tightly covered in the refrigerator for 3-4 weeks.
