List of Ingredients
4 1/3 cups sugar, divided
Grated rind and juice of 3 lemons
Grated rind and juice of 3 oranges
3 eggs, separated
1/2 cup cold water
1 tsp. vanilla
1 1/2 cups cake flour
1 tsp. salt
1 1/2 tsps. baking powder
Recipe
To prepare the coating: Mix together 3 cups sugar and the grated rind and juice of the lemons and oranges. Stir well. Put aside. Beat the egg yolks well and then gradually add 1 1/3 cups sugar. Add cold water and vanilla gradually. Sift together 3 times, the cake flour, salt and baking powder. Add to egg yolk and sugar mixture. Beat egg whites until stiff peaks form. Then fold egg whites into batter. Fill tiny muffin tins that have been sprayed generously with vegetable cooking spray about half full with the batter. Bake at 400 degrees for about 15 minutes or until golden brown. Remove from pan and while still warm, quickly dip little cakes into the prepared coating. Completely cover cakes but do not soak. Place on dinner plates to dry for several hours or overnight.
Makes about 3 dozen.
