    Saffron Bourbon Pilaf

    List of Ingredients




    Serves 6
    1/4 C. butter
    2 Tbs. olive oil
    2 C. rice
    1 small onion, minced
    4 C. chicken broth
    1/16 tsp. saffron
    1-2 Tbs. Maker's Mark Bourbon
    1/3 C. slivered, toasted almonds

    Recipe



    Melt butter and olive oil in a large saucepan. Stir in rice and onion, cooking over low heat until rice is lightly colored. Add broth and saffron and bring to a boil. Reduce heat and cover tightly; cook 20-25 minutes or until liquid is absorbed. Sprinkle with toasted almonds and bourbon; fluff with a fork and serve.
