Pina Colada Cake

1 cup coconut -- toasted
1 white cake mix
1 cup pineapple juice
1/3 cup oil
1/4 cup rum
4 egg whites
***TOPPING***
3/4 cup pineapple juice
3/4 cup sugar
***FROSTING***
1 cup crushed pineapple -- drained
1/4 cup powdered sugar
1 cup heavy cream -- whipped
Preheat oven to 350 degrees F. Blend cake mix, pineapple juice, oil, rum and egg whites on low speed of mixer until moistened; then beat 2 1/2 minutes on high speed. Stir in 1/2 cup of the toasted coconut. Pour into a greased and floured 9x13" pan. Bake at 350 degrees F. for 25-30 minutes.
TOPPING: Heat pineapple juice and sugar to boiling. Prick cake at 1/2-inch intervals with long tine fork. Pour sugar mixture over cake.
Let cake cool completely.
FROSTING: Combine drained pineapple, powdered sugar and whipped cream. Spread over cooled cake. Top with remaining coconut. Serve chilled.
