    Squash and Cheese Casserole

    Amount Measure Ingredient -- Preparation Method
    -------- ------------ --------------------------------
    1 medium zucchini -- sliced
    shortening
    1 medium onion -- chopped
    salt and pepper -- to taste
    6 ounces Muenster cheese
    3 eggs -- beaten

    Saute onion in shortening. Add squash, salt and pepper to taste. Saute squash. Cook covered until squash is soft, stirring occasionally. Place mixture in ungreased 1 1/2 quart casserole. Combine eggs and cheese and pour on top. Bake at 350 degrees until golden.

    This resembles a souffle.
