    Pina Colada Cheesecake #3

    Amount Measure Ingredient -- Preparation Method

    ***CRUST***
    1 cup graham wafer crumbs
    1/2 cup coconut
    1/4 cup margarine
    ***FILLING***
    3 packages cream cheese -- softened
    -- (8 oz each)
    3/4 cup sugar
    4 eggs
    1 cup sour cream
    1 can cream of coconut (12 oz)
    1 can crushed pineapple (14 oz) -- well drained
    2 tablespoons cornstarch
    1 tablespoon lemon Juice
    ***TOPPING***
    1/2 cup apricot Jam
    2 kiwi fruit
    1 can pineapple tidbits -- drained
    1 cup coconut

    CRUST: Heat oven to 350 degrees F. Combine first 3 ingredients and press into bottom and 1 inch up sides of 9-inch springform pan.

    Bake for 10 minutes. Cool on wire rack.

    FILLING: Beat Cream cheese and sugar until smooth. Beat in eggs one at a time until just blended. Stir in remaining ingredients.

    Pour into pan. Bake at 350 degrees F. for approximately 1 hour and 20 minutes or until center is just set. Allow to cool completely in pan and then chill for approximately 6 hours or overnight.

    TOPPING: Melt jam over medium heat; sieve to remove fruit pieces.

    Arrange kiwi and pineapple on top of cake. Brush fruit with jam and press the coconut onto sides of cake.

    Variation: You can add sliced strawberries to the top of the cake as well.
