    Apricot and Blueberry Flan

    Amount Measure Ingredient -- Preparation Method

    1/2 cup butter -- cut up
    3/4 cup sugar
    1 1/3 cups all-purpose flour
    1/2 teaspoon salt
    1/4 teaspoon baking powder
    1 teaspoon cinnamon
    2 cans apricot halves (16 oz each) -- drained
    1 cup blueberries (fresh or frozen) -- rinsed and drained
    1 cup light cream
    -- (half and half)
    1 egg
    whipped cream or
    vanilla ice cream

    Preheat oven to 375 degrees F.

    In food processor, mix butter, sugar, flour, salt, baking powder, and cinnamon until fine. Reserve 1/3 cup for topping and set aside.

    Using a 10-inch flan pan with removable bottom, press remaining mixture into pan and up the sides. Place apricot halves, cut-side up, evenly on the crust. Scatter blueberries over. Sprinkle on reserved topping. Bake 20 minutes.

    In a pitcher or bowl, whisk cream with egg. Pour mixture over flan while still in the oven. Bake until set, 25 minutes longer. Cool on a wire rack. Remove rim from pan and cut flan into wedges. Top with whipped cream or ice cream.
