    Couscous, Raisin, and Walnut Pudding

    1 cup instant couscous
    1/2 cup walnuts -- coarsely chopped
    -- (toasted or not)
    1/2 cup raisins
    zest of 1 lemon -- finely grated
    1/2 teaspoon ground cinnamon
    1/4 teaspoon ground nutmeg
    1 3/4 cups milk (to 2 cups)
    1/3 cup light brown sugar -- packed
    or
    honey or maple syrup
    1 teaspoon vanilla extract
    3 large eggs

    Prepare the couscous.

    Preheat the oven to 350 degrees F. Butter 6 individual ovenproof bowls or large custard cups; you may also use a small (4- to 5-cup) ovenproof casserole or loaf pan.

    Fluff the couscous with a fork to separate the grains, then stir in the walnuts, raisins, lemon zest, and spices.

    In a small saucepan, heat the milk and sweetener until hot to the touch. Remove from the heat and stir in the vanilla. Whisk the eggs in a bowl just until frothy, then gradually whisk in the milk.

    Divide the couscous mixture evenly between the dishes or spread it in the larger dish; if you're using individual dishes, leave some headroom for the liquid. Cover with the heated liquid, and place your dish(es) in a large shallow casserole. Pour enough hot water into the casserole to come halfway up the sides of the dishes. Bake the pudding for about 40 minutes, until the centers are still slightly moist. This is best served soon after it is baked. Serve with a little pitcher of milk, light cream, or heavy cream.

    Note: To make the instant couscous, either follow the package directions, adding 1/4 teaspoon salt, or bring 1 1/2 cups of water to a boil in a small covered saucepan. Stir in the dry couscous and 1/4 teaspoon salt, and heat for 15 more seconds. Cover, turn off the heat, and let sit for 5 minutes.
