    Delicate Lemon Pudding

    3 eggs -- separated
    1 cup milk
    1 cup sugar
    2 tablespoons flour
    2 tablespoons butter -- melted
    1 lemon -- juice of
    1 lemon -- rind of

    Bring eggs and milk to room temperature. Mix sugar and flour in a bowl. Add egg yolks, and milk. Stir together well. Add melted butter, lemon juice and rind. Beat egg whites until stiff and fold into the yolk mixture. Put in a quart-sized round glass casserole dish. Place in a pan of water.

    Bake in a preheated 350 degree oven for 1 hour or until lightly browned on top. Serve warm or let cool at room temperature. Do not refrigerate.

    Can be served with a dollop of whipped cream and a garnish of candied lemon peel or a sprig of fresh mint.

    Serves 6.
