    This pudding is very chocolaty and one can't believe it is a low-fat treat.

    Triple Chocolate Pudding

    3 tablespoons unsweetened cocoa powder
    3 tablespoons cornstarch
    2/3 cup dark brown sugar -- firmly packed
    3 cups low-fat 1% milk
    1/4 teaspoon salt
    1 vanilla bean -- split lengthwise
    or
    1 teaspoon vanilla extract
    2 ounces German sweet chocolate
    1 ounce chocolate chips
    -- (about 2 tablespoons)
    3 tablespoons whipped cream
    2 teaspoons shaved chocolate

    In a small bowl, combine the cocoa powder, cornstarch, 1/3 cup of the brown sugar, and 1/2 cup of the milk.

    In a medium saucepan, combine the remaining 2-1/2 cups milk, the remaining 1/3 cup brown sugar, the salt, and vanilla bean (if using). Bring to a boil over medium heat. Whisk the cocoa mixture into the boiling milk mixture and cook, whisking just until thickened, about 4 minutes.

    Stir in the sweet chocolate and chocolate chips, remove from the heat, and stir just until the chocolate is melted. Stir in the vanilla extract (if using). Spoon into 4 bowls and chill. Top with a dollop of whipped cream, sprinkle the shaved chocolate over, and serve.

    Tip: To make the shaved chocolate, keep a chocolate bar at room temperature. Use a vegetable vegetable peeler to grate off thin pieces. Let them fall onto a plate. Don't pick up the shavings with your fingers or they will melt from the heat of your hands or fingers. Instead pick up the pieces on a knife blade or with a small metal spatula.

    Each serving provides: 382 calories, fat 12 g, carbohydrate 67 g, protein 8 g, cholesterol 14 mg, sodium 248 mg.
