    Buttermilk Ranch Dressing

    Amount Measure Ingredient -- Preparation Method
    -------- ------------ --------------------------------
    1/2 small onion -- cut in chunks
    2 tablespoons cider vinegar
    1 tablespoon olive oil
    1 tablespoon Dijon mustard
    1 tablespoon fresh parsley -- chopped
    1 teaspoon garlic -- minced
    1/2 teaspoon black pepper -- coarsely ground
    1 cup low-fat buttermilk -- (1 1/2 % milk fat)

    Combine all ingredients except buttermilk in bowl of a food processor or blender. Process 2 minutes or until mixture is of even consistency.

    Put mixture into a pint jar. Add buttermilk and shake to mix. Chill at least 1 hour for flavors to blend.

    1 serving = 2 tablespoons

    Each serving provides: 21 calories, 1 g cholesterol, 1 g protein, 1 g fat, 0 mg cholesterol, 0 g fiber, 45 mg sodium
