    White Russian Vegetable Soup

    2 cups beets -- diced
    4 pounds chuck roast
    1 1/2 quarts water
    3 1/2 cups tomatoes
    3/4 cup fresh lemon juice
    1/4 cup parsley -- chopped
    1 teaspoon paprika
    1 teaspoon salt
    sour cream
    4 cups shredded cabbage
    2 large onions -- chopped
    bouillon cubes to taste
    3 garlic cloves -- minced
    one small bay leaf
    2 tablespoons sugar
    1 teaspoon pepper

    Cover roast with 1 1/2 quarts of water. Bring to a boil ; cover and simmer one hour.

    Taste stock for flavor and add bouillon cubes as needed. Add vegetables, lemon juice and seasoning and simmer covered 2 hours. Remove the roast, take out the bones and cut meat into bite size pieces. Return meat to soup. Serve with a generous spoonful of sour cream per serving.
