    Macaroni with Meat Sauce, Locri Style

    Amount Measure Ingredient -- Preparation Method

    5 tablespoons olive oil
    5 links Italian sausage -- skinned and crumbled
    -- (make sure sausage contains
    -- fennel seeds to enhance the
    -- flavor)
    1 large pork chop -- boned and cubed
    1/2 large onion -- peeled and diced
    1 can Italian peeled plum tomatoes -- chopped
    -- with liquid (2 lb size)
    salt -- to taste
    pepper -- to taste
    1 pound bucatini or perciatelli
    6 fresh basil leaves -- torn
    1/4 cup dry ricotta -- grated
    or
    1/4 cup sharp Pecorino Romano cheese

    In a large saucepan, heat oil over moderate heat. Add sausage and pork, and cook until meat is well browned. Add onion and saute until soft and translucent.

    Add tomatoes and their liquid and salt and pepper to taste. Stir and simmer for 1 hour.

    Cook pasta until al dente. Drain well and pour into a pasta bowl. Toss with sauce and meat. Sprinkle with basil and cheese. Serve immediately.

    Judi's note: Dry ricotta is also called ricotta salata.
