    Judi Mae's Orange, Grape, & Almond Salad

    Amount Measure Ingredient -- Preparation Method
    -------- ------------ --------------------------------
    3 cups romaine lettuce
    1 cup mixed greens
    1 cup baby spinach leaves
    1/2 large Vidalia or Walla Walla onion -- sliced
    2 oranges -- peel, remove pits,
    -- and cut in segments
    1 cup red seedless grapes
    1/3 cup almonds -- lightly toasted
    ***DRESSING***
    1/2 cup extra virgin olive oil
    1/4 cup Balsamic vinegar
    1 teaspoon orange juice -- (optional)
    1/2 teaspoon Dijon mustard
    1 garlic clove -- minced
    1/4 teaspoon dried tarragon leaves -- or to taste
    1/8 teaspoon dried basil
    1 teaspoon onion -- finely grated
    1 dash Mrs. Dash garlic and herb seasoning*
    black pepper -- freshly ground

    *Any all-purpose no salt seasoning can be used here.

    Place lettuce, mixed greens, and spinach in a large bowl. Add onion, oranges, grapes, and almonds.

    Shake or mix dressing well and put half of dressing in bowl with salad ingredients. Toss very lightly. If more dressing is needed add a little at a time until salad is coated but not saturated.

    Judi's notes: Make sure you use good quality olive oil and Balsamic vinegar. This is a nice tasting salad and quite colorful. I do not use salt in this dressing, but if you insist use just a bit.
