    I love the flavor of shrimp when there is a tequila lime marinade. This is an easy recipe that whips together quickly for a nice dish for company or every day fare. /jmp

    TEQUILA MARINADE:
    1/3 cup tequila
    2 tablespoons extra-virgin olive oil
    2 tablespoons fresh lime juice
    1 tablespoon garlic -- minced
    1 tablespoon jalapeno with seeds -- minced
    1 teaspoon ground coriander
    1/2 teaspoon black pepper -- freshly ground
    REST OF INGREDIENTS:
    1 1/2 pounds shrimp -- peeled and deveined
    -- (24 to 26-count per pound)
    kosher salt
    2 limes -- cut into wedges

    Whisk together the marinade ingredients in a small bowl.

    Place the shrimp in a large zip-top plastic bag, then pour in the marinade and seal. Squish the marinade with the shrimp and turn the bag over. Let marinate in the refrigerator for a least 30 minutes but no longer than 45 minutes.

    Remove the shrimp from the bag and discard the marinade. Skewer the shrimp and season lightly with salt. Return to the refrigerator until your fire is ready.

    Light a charcoal fire or preheat your gas grill on high. Oil the grill's cooking surface. Place the skewers on the grill and cook until the shrimp are just opaque in the center and firm to the touch, 2 to 4 minutes total turning once.

    Transfer to a platter and serve warm with the lime wedges.
