    Original Oat Bran Muffins

    1/2 cup whole wheat flour
    2 cups oat bran
    2 teaspoons baking powder
    1 teaspoon baking soda
    1 1/2 teaspoons ground cinnamon
    1/2 cup raisins
    3 egg whites
    1 1/4 cups skim milk
    1/4 cup brown sugar -- firmly packed
    3 tablespoons vegetable oil
    1 1/2 teaspoons vanilla extract

    Preheat oven to 375 degrees F. Lightly oil 12 muffin cups or spray with a nonstick cooking spray.

    In a large bowl, combine flour, oat bran, baking powder, baking soda, and cinnamon. Mix well. Add raisins. In another bowl, combine remaining ingredients. Beat with a fork or wire whisk until blended. Add to dry mixture, mixing until all ingredients are moistened.

    Divide mixture evenly into prepared muffin cups. Bake 20 minutes, until a toothpick inserted in the center of a muffin comes out clean. Remove muffins to a rack to cool.

    Per muffin:

    153 calories, 5 g protein, 5 g fat, 23 g carbohydrate, 168 mg sodium, 1 mg cholesterol, 3 g fiber

    Judi's notes: This muffin is a little drier than other types because oat bran is coarser than flour. Serve these muffins lightly warmed.
