    Vanilla-Peach-Pear Muffins

    2 cups flour
    1/4 cup sugar
    2 1/2 teaspoons baking powder
    1/2 teaspoon soda
    1/4 teaspoon salt
    2 eggs
    2 teaspoons pure vanilla extract
    3/4 cup milk
    4 tablespoons unsalted butter -- melted
    1 ripe Bartlett pear -- peeled, cored, and
    -- diced
    1 ripe peach -- peeled, pitted, and
    -- diced

    Preheat the oven to 375 degrees F. and grease or line 12 muffin cups.

    Whisk the flour, sugar, baking powder, baking soda and salt in a large bowl. In a small bowl, whisk the eggs and vanilla until well beaten. Mix in the milk and butter. Fold in the pear and peach chunks. Pour the liquid ingredients over the dry ingredients and mix until just moistened. Place the batter in the prepared muffin cups and bake for 18 to 22 minutes, or until lightly browned.

    Remove from the pans to cool and store for 24 hours before eating.

    Great with pear butter or peach-pear jam. Also equally good with a bit of cream cheese and raspberry jam.
