    Amount Measure Ingredient -- Preparation Method

    1/2 cup raisins
    1 cup water
    1 cup matzo cracker -- finely crushed
    4 eggs -- separated
    1 tablespoon oil
    1/2 cup sugar
    1/2 teaspoon salt
    1/4 teaspoon cinnamon
    1 1/2 cups tart apples -- grated
    1/2 cup walnuts or pecans -- chopped
    1 teaspoon grated lemon rind
    1 tablespoon grated orange rind
    grease -- for the baking
    -- dish

    In a small saucepan, soften the raisins by simmering in water. Let it cool slightly. Add the matzo and toss until it is nice and moist. In a medium-sized mixing bowl, beat the egg yolks well. Now add the oil, sugar, salt, cinnamon, apples, nuts, rinds, and the raisin matzo mixture. Make sure you blend it well.

    In a separate mixing bowl, beat the egg whites until they are stiff but not dry. Fold the beaten egg whites into the egg yolks. Place the mixture into a greased 8-1/2-inch baking pan. Bake in a preheated 350 degree F. oven for approximately 40 minutes or until a knife blade inserted into the center comes out clean.

    Serve this hot with Clear Wine Sauce if desired (see separate recipe).
