    Baked Macaroni Casserole #2

    2 tablespoons cornstarch
    3/4 teaspoon salt
    1/2 teaspoon dry mustard -- optional
    1/4 teaspoon pepper
    2 1/2 cups milk
    2 tablespoons butter or margarine
    2 cups cheddar cheese -- shredded and
    -- divided
    8 ounces elbow macaroni -- (2 cups), cooked in
    -- boiling water 6 minutes
    -- and drained

    Combine the cornstarch, salt, dry mustard, and pepper in a medium saucepan. Stir in milk. Add butter or margarine. Heat, stirring constantly, over medium-high heat until mixture boils; boil 1 minute. Remove from heat.

    Stir in 1-3/4 cups cheese, stirring until melted. Add elbow macaroni. Pour into greased 2-quart casserole. Sprinkle with reserved cheese. Bake in a 375 degrees 25 minutes or until lightly browned.
