    Different Sweet Potato Pie

    Amount Measure Ingredient -- Preparation Method
    -------- ------------ --------------------------------
    1 3/4 cups sweet potato -- mashed to
    -- smooth paste
    3 eggs -- beaten
    1 can sweetened condensed milk
    -- (14 ounce)
    1 teaspoon candied ginger root -- cut in small
    -- pieces
    1 teaspoon pumpkin pie spice
    1/2 stick margarine -- melted
    1 unbaked pie crust (9-inch)

    Mix potatoes, eggs, milk, ginger, spice, and margarine thoroughly with an electric mixer until smooth -- ginger will remain nutty in texture. Pour in pie shell. Bake 50 minutes at 350 degrees. Serve warm or serve cool with whipped cream.
