1 1/2 pounds beef shanks with meat
-- (up to 2 pounds)
1 1/2 quarts cold water
2 pounds fresh okra
1 large onion -- chopped
1 large green pepper -- chopped
1 can (29 oz) canned tomatoes
-- with liquid
1 can (6 oz) tomato paste
salt -- to taste
pepper -- to taste
Worcestershire sauce -- to taste
hot pepper sauce -- to taste
cooked rice (optional)
Cover soup bones with water and boil slowly at least 2 hours. Cool and refrigerate overnight.
The next day, remove congealed fat on top of stock. Remove bones, and cut up and reserve meat. Add okra, onion, green pepper, and tomatoes to stock. Cook 2 hours, adding tomato paste during last 30 minutes. Season with salt, pepper, Worcestershire sauce, and hot pepper sauce to taste. Add chopped soup meat last. Serve over rice or in soup bowls.
