Texas Tabbouleh

3/4 cup bulgur
1 cup orange juice -- freshly squeezed
2/3 cup tomatoes -- chopped
2/3 cup cucumber -- chopped
1 tablespoon tequila (optional)
1 jalapeno pepper -- seeded and diced
1 teaspoon (heaping) cilantro -- chopped
salt -- to taste
Place bulgur in bowl and mix with orange juice; let sit for 30 minutes.
Add tomatoes, cucumber, tequila, jalapeno, and chopped cilantro. Mix well. Refrigerate at least 1 hour.
