    Gold's Deli Grilled Pastrami

    2 1/2 teaspoons unsalted butter -- room temperature
    2 slices rye bread
    1 1/2 teaspoons Dijon mustard
    4 slices pastrami (about 2 oz)
    2 slices white onion (thin)
    2 slices ripe tomato
    2 slices Swiss cheese (thin)

    Working on a sheet of waxed paper, spread 3/4 teaspoon of the butter on one side of each slice of the bread. Turn the slices over, and spread the mustard on the other side.

    Lay the pastrami on the mustard side of one of the bread slices. Cover with the onion and tomato, then with the Swiss cheese. Top with the remaining slices of bread, buttered side up. Using the waxed paper, press down on the sandwich to flatten slightly.

    Heat the remaining 1 teaspoon butter in a nonstick skillet over medium heat. Add the sandwich, and cook, pressing down on it with a spatula, for 3 minutes until golden brown. Turn the sandwich over and cook for 2 minutes longer.
