    Tarragon Sour Cream Sauce

    2 egg yolks
    1/4 teaspoon dried tarragon leaves
    1 cup dairy sour cream
    1 bay leaf, crumbled
    1/4 teaspoon garlic -- finely chopped
    1/2 teaspoon salt
    1 teaspoon bottled capers -- drained

    In small bowl, with rotary beater, beat egg yolks with tarragon until thick and lemon colored.

    In saucepan, slowly heat sour cream, bay leaf, and garlic just until bubbles form around edge. Strain; discard garlic and bay leaf. Pour sour cream back into saucepan. Pour a little hot sour cream into egg yolks, stirring; return to saucepan.

    Over low heat, bring just to boiling point, stirring constantly. Add salt and capers.
