    Sweet-and-Sour Shrimp with Mango and Ginger

    1/4 cup soy sauce
    2 tablespoons dry sherry
    2 tablespoons cornstarch
    1 1/2 pounds large shrimp -- peeled and deveined
    1 cup homemade chicken broth
    or
    low-sodium canned broth
    2 tablespoons rice vinegar
    2 tablespoons sugar
    1/2 teaspoon salt
    2 tablespoons vegetable oil
    2 tablespoons minced fresh ginger
    1 jalapeno -- seeded and minced
    2 garlic cloves -- minced
    1 medium red onion -- thinly sliced into
    -- half moons
    1 medium red bell pepper -- seeded and cut into
    -- 1/4-inch thick strips
    2 medium mangoes (1 lb) -- pitted, peeled, and
    -- cut into 1/2-inch wide
    -- strips

    In a medium bowl, combine 2 tablespoons of the soy sauce and the sherry. Add 1 tablespoon of the cornstarch and stir to dissolve. Stir in the shrimp. Cover and let stand for at least 15 minutes and up to 30 minutes.

    In a small bowl, combine the broth, the remaining 2 tablespoons soy sauce, the vinegar, sugar, and salt. Add the remaining 1 tablespoon cornstarch and stir to dissolve. Set aside.

    Heat a large 12-inch skillet over medium-high heat. Add the oil, swirl to coat the skillet, and heat until the oil is very hot. Add the ginger, jalapeno and garlic and stir until very fragrant, about 30 seconds. Add the red onion and bell peppers. Stir-fry until the onion is softened, about 3 minutes.

    Drain the shrimp. Add to the skillet along with the mango strips. Cook, turning gently so the mango strips don't break up, just until the shrimps begin to turn pink and firm, about 1 minute. Add the broth mixture, bring to a boil, and cook until thickened, about 1 minute. Serve immediately.
