Carrot Ginger Soup

3/4 cup onion -- minced
1/4 cup ginger root -- peeled and minced
1/4 cup butter
6 cups chicken broth
10 medium carrots (to 12) -- sliced
1 teaspoon sugar
1 1/2 cups half and half
3 tablespoons unsalted butter
1/4 cup flour
1/2 teaspoon cinnamon
salt and pepper
paper thin carrot slices

In a Dutch oven, saute onion and ginger root in 1/4 cup butter 7 minutes or until onion is softened. Add broth, carrots and sugar; simmer covered 35 minutes. Puree mixture in blender or food processor and strain. Return to Dutch oven; stir in half and half and cook over low heat
4 minutes.
In a large saucepan, melt unsalted butter and stir in flour. Cook over medium heat until bubbly. Slowly add carrot mixture to flour; stirring constantly until well blended. Season with cinnamon, salt, and pepper to taste. Garnish each serving with carrot slice and serve warm.
