    Rich Turkey Stock

    Amount Measure Ingredient -- Preparation Method

    1 turkey carcass -- quarter
    1 onion -- halve
    2 celery ribs
    2 carrots -- peel
    oil
    fresh parsley sprigs
    1 bay leaf

    Place the carcass in a roasting pan. Add onion, celery and carrots.

    Drizzle with oil, then roast in a 350 degree F. oven for 20-30 minutes.

    Pour off the fat and transfer the ingredients to a large stockpot. Add parsley, bay leaf and enough cold water to cover the ingredients. Do not add salt and pepper until you use it in a recipe. Bring almost to a boil, reduce heat and skim off any foam from the top of the liquid.

    Simmer at least 2 hours. Strain the stock.

    This rich broth can be used for soups or sauces or frozen in containers or ice cube trays for later use.
