    Cranberry Pumpkin Bread

    1 3/4 cups flour
    1/2 cup sugar
    1/2 cup Splenda
    2 teaspoons baking powder
    1/2 teaspoon baking soda
    1 teaspoon cinnamon
    1/2 teaspoon nutmeg
    1/2 teaspoon allspice
    1 cup pumpkin
    1/4 cup Canola oil
    1/4 cup unsweetened applesauce
    1 egg
    1/4 cup Egg Beaters® 99% egg substitute
    1 1/2 cups cranberries -- chopped or halved

    Recipe



    Preheat oven to 350º. Spray a loaf pan with vegetable cooking spray; set aside.

    Combine dry ingredients in a mixing bowl. Combine remaining ingredients, except cranberries, in a separate mixing bowl; add to dry ingredients, stirring just until ingredients are moist. Stir in cranberries. Spread evenly in prepared pan.

    Bake 1 1/2 hours at 350º.
