    Holiday Cranberry Bread

    List of Ingredients

    2 cups flour
    1/2 cup sugar
    1/2 cup Splenda
    1 tablespoon orange rind
    1/2 teaspoon baking powder
    1 teaspoon salt
    1/2 teaspoon baking soda
    3/4 cup orange juice
    1 egg
    2 tablespoons light margarine
    1 cup cranberries, chopped or halved

    Recipe

    Preheat oven to 350º. Spray a loaf pan with vegetable cooking spray; set aside.

    Combine all ingredients in large bowl except cranberries; mix well. Stir in cranberries. Place in prepared * pan.

    *For 10" ring pan, 12 cup fluted pan bake at 350º for 34 to 45 minutes.
    For loaf pan bake at 350º for 1 hour.
    If using colored fluted pan, bake at 325º.

    Yield: 1 loaf -- 16 slices
