    Low Fat Banana Bread

    List of Ingredients

    1/2 cup sugar
    1/2 cup Splenda
    1 egg, beaten
    2 tablespoons shortening -- melted
    3/4 cup orange juice
    2 cups flour
    1 1/2 cups overly ripe bananas
    1 1/2 teaspoons baking powder
    1/2 teaspoon baking soda
    1/2 teaspoon salt

    Recipe

    Preheat oven to 350º.

    Mix sugar, Splenda, shortening, juice, eggs, and banana. Combine dry ingredients and add to banana mixture. Turn into loaf pan sprayed with vegetable cooking spray.

    Bake at 350º for 50 to 60 minutes.

    Yield: 1 loaf -- 16 slices
