    Spiced Pumpkin Bread

    List of Ingredients

    4 cups flour
    1 tablespoon pumpkin pie spice
    3/4 teaspoon salt
    2 teaspoons baking powder
    1 teaspoon baking soda
    15 ounces pumpkin puree
    1 cup apple juice
    2 cups packed brown sugar
    2 eggs
    1/2 cup Egg Beaters® 99% egg substitute
    1/4 cup canola oil
    2 teaspoons vanilla

    Recipe

    Preheat oven to 350º.

    Combine dry ingredients. Combine pumpkin, brown sugar, juice, eggs, oil, and vanilla, mixing well; add to dry ingredientss. Stirring until moistened. Spoon into 2 (9" x 5") greased and floured loaf pans.

    Bake at 350º for 60 to 70 minutes. Cool 10 minutes. Remove from pan.

    Yield: 2 loaves -- 32 slices
