    Strawberry Bread

    Most strawberry bread recipes are "swimming" in oil. This one has only 2 Tbsp!

    List of Ingredients

    1 3/4 cups flour
    1 teaspoon baking soda
    1/4 teaspoon salt
    1/2 cup sugar
    1/4 cup Splenda
    1 teaspoon cinnamon
    1 egg -- lightly beaten
    1/4 cup Egg Beaters® 99% egg substitute
    1/4 cup skim milk
    2 tablespoons Canola oil
    1 cup strawberries -- chopped
    1 tablespoon flour

    Recipe

    Preheat oven to 350º.

    Combine first 6 ingredients in a medium bowl and make a well in center of mixture. Combine eggs, milk, and oil; add to flour mixture, stirring just until moistened. Dredge strawberries in 1 Tbsp. flour and gently fold into batter. Spoon batter into a 8 1/2" x 4 1/2" x 3" loaf pan sprayed with cooking spray.

    Bake at 350º for 50 - 55 minutes. Cool in pan 5 minutes; remove from pan, and cool completely on wire rack.

    Yield: 1 loaf -- 16 slices
