With most of these recipes, I have cut back the calories and reduced the fat and cholesterol content by: • replacing half of the sugar with Splenda • using "light" margarine instead of regular margarine • using 1/4 cup of Eggbeaters (or 2 egg whites) for 1 of the eggs -- provided that the recipe called for 2 or more eggs • replacing some of the oil with unsweetened applesauce. None of these changes disadvantaged the final product. Most of the quick bread recipes had enough fruit or fruit juice in the recipe to compensate for the change in ingredients.
