    Amazing Coconut Pie

    originally this was a Bisquick recipe

    Recipe Introduction

    By "lightening up" all of the ingredients (except the coconut), I was able to reduce the calories, cholesterol, carbs, by at least half, and the fat by nearly half.

    List of Ingredients

    2 cups skim milk
    3/4 cup Splenda
    1/2 cup reduced fat Bisquick
    2 eggs
    2 egg whites
    1/4 cup light margarine
    1 1/2 teaspoons vanilla
    1 cup coconut

    Recipe

    Preheat oven to 350º. Grease a 9" pie plate; set aside.
    Place all ingredients except coconut in blender and blend on low speed for 3 minutes. Pour into prepared pie plate. Let stand 5 minutes. Sprinkle with coconut.

    Bake at 350º for 40 minutes.

    Per Serving: 133 Calories; 8g Fat (53.1% calories from fat); 5g Protein; 10g Carbohydrate; 1g Dietary Fiber; 48mg Cholesterol; 225mg Sodium. Exchanges: 1/2 Grain(Starch); 1/2 Lean Meat; 0 Fruit; 0 Non-Fat Milk; 1 1/2 Fat.
