    Lazy Man's Cabbage Casserole

    Recipe Introduction

    Just two little changes (using extra lean ground beef (10% fat), and reduced fat tomato soup,) and the fat content is cut from 21 grams to 10 grams, and cholesterol from 65 mg to 39 mg.

    List of Ingredients

    1 pound extra lean ground beef
    1 pkg. onion soup mix
    1 can tomato soup, reduced fat, condensed
    1 soup can water
    1 1/2 cups cooked rice -- (use regular, not instant rice)
    2 cups coarsely chopped cabbage -- more or less!



    Recipe

    Preheat oven to 350º.

    Chop the cabbage; place in bottom of casserole dish that has been sprayed with vegetable cooking spray.

    Brown the ground beef and drain the fat; add the tomato soup, water, onion soup mix and rice; mix well. Place the beef mixture over the cabbage.

    Cover & bake for 1 1/2 hrs. Stir before serving.
