    List of Ingredients


    • 1 can refried beans, use about 1 cup
    • 1/2 cup sour cream
    • Taco seasoning mix
    • 2 cups cooked chicken, chopped
    • 1 medium red bell pepper, chopped (1 cup)
    • 1/2 cup thinly sliced green onions with tops (about 8)
    • 3/4 cup sliced pitted ripe olives, divided
    • 1/4 cup snipped fresh cilantro, divided
    • 5 (10-inch) flour tortillas
    • 8 ounces mild cheddar cheese, shredded (2 cups)
    • Vegetable oil
    • 2 medium plum tomatoes, seeded and chopped
    • Salsa (optional)


    Instructions


    1. Preheat oven to 375 degrees F.
    2. In 1 quart bowl, combine refried beans, 2 tablespoons sour cream and 1 tablespoon seasoning mix; mix well.
    3. Chop chicken and bell pepper using food chopper; put in 2 quart bowl. Add green onions, 1/2 cup olive slices, and 2 tablespoons of cilantro. Mix gently.
    4. Place 1 tortilla on baking stone. Put 2 scoops of bean mixture; spread to within 1/4-inch of edge.
    5. Top evenly with 1 cup of chicken mixture. Cut cheese chunk into 4 equal pieces.
    6. Shred one piece of cheese evenly over the chicken mixture.
    7. Repeat layers of tortilla, bean mixture, chicken mixture and cheese 3 more times.
    8. Top with remaining tortilla; spray with vegetable oil.
    9. Bake 25 to 30 minutes or until top is golden brown.
    10. Mix the remaining 1/4 cup sour cream wtih the remaining 1/2 teaspoon seasoning mix; spread evenly over top of warm tortilla stack.
    11. Sprinkle with tomato, remaining 1/4 cup olive slices, and cilantro.
    12. Cut into wedges and serve with salsa.
